Genius Smashed Potato Breakfast Recipe! What to Eat Today for Breakfast, Lunch, and Dinner.

Breakfast – Smashed Potato with avocado and tomato
It’s so simple that it’s genius!
Ingredients:
– 4-6 small/medium boiled potatoes
– (Optional) Oil for brushing them
– salt
Topping:
– 1 Clove garlic, minced
– (Optional) olive oil for the pan
– 1 Large tomato
– Seasoning of choice (all purpose seasoning, dash of pepper, ect.)
– ½ Avocado, mashed
– ½ Lemon juice
– (Optional) Fresh spring onion for the top, or fresh cilantro

Lunch – Walnut Burger Lettuce Taco
Ingredients:

– 1 1/2 cup Roasted walnuts
– 1 medium Onion (grilled)
– 1 cup Rice (cooked beforehand)
– 1/2 cup of Bread crumbs
– 1 can Black beans
– 2 tbsp Flax egg (2 tbsp ground flaxseed 4 tbsp water)
– 2 tbsp Maple syrup
Seasonings mix:
– 2 tbsp All purpose seasoning
– 2 tbsp Paprika
– 2 tbsp Chipotle powder
– 2 tbsp Garlic powder
– 2 tbsp Cajun seasoning
– 2 tbsp Nutritional yeast
– 2 tsp Black pepper
– 1 tsp Salt
– 1 tsp Cumin
Fresh Taco Toppings:
– Butter Lettuce (or romaine lettuce, iceberg lettuce, ect.)
– Tomatoes
– Radish
– Avocado
– Cilantro
– Vegan shredded cheese

Dinner – Crispy Tofu in Garlic Sauce with Rice and Broccoli
Ingredients:
– 1 package extra firm tofu
– 2 tbsp cornstarch (can sub with arrowroot powder)
For the Garlic Sauce:
– 1 head garlic, minced
– 1/4 cup sesame oil (use 1tbsp if you want low fat)
– 1/3 cup low sodium soy sauce, (make sure it’s gluten free if needed)
– 1 tbsp cornstarch (can sub arrowroot powder)
– 1/2-1 tsp garlic chili sauce *optional
Serve with a carbohydrate base:
– brown/white/wild rice, quinoa, or noodles
– steamed broccoli or sautéed spinach
– sesame seeds, optional
