  1. Start by greasing your pan and preheating the oven. 
  2. Then add butter to a bowl and cream it, and add in the sugar. 
  3. Add the eggs one at a time, followed by lemon zest, and lemon juice. 
  4. Then in a new bowl add dry ingredients and slowly add into the wet batter. 
  5. Pour the lemon brownie batter into the baking tray and bake as directed. 
  6. Once done remove and allow the brownies to cool. 
  7. Whip up the lemon glaze and pour over the cooled brownies. Then slice and serve.

Parchment Paper 

If you want to easily remove brownies from the pan you can use parchment paper to line your pan. Then once the brownies are cooled just grab the edge of the parchment paper and lift up. 

Zesting Lemons 

Make sure that when you zest your lemon, that you only zest the yellow portion of the lemon rind. If you get the white color of zest it will create a bitter flavor. 

Mixer 

Having a hand or stand mixer is important. You will find that it helps to really cream your butter and sugar together nicely. Plus it speeds up the mixing process.

White Chocolate Chips 

Stir in about ⅓ cup of white chocolate chips to the brownie batter. This will give your lemon brownies a studded chocolate twist that is so delicious. 

Glaze Topping 

You do not have to add the lemon glaze on top. I personally love the lemon glaze it helps to add texture but also a bolder lemon flavor to the brownies. 

Frosting 

Instead of a glaze topping you could easily whip up or buy your favorite frosting. I think a vanilla frosting would taste delicious spread on top of the brownies.

Are brownies better with butter or oil?

Butter will give your brownies a more cake-like texture. Where oil will be a lighter and softer fudge-like brownie. So depending on the recipe you will find the ingredients vary. 

Do brownies go on the top or bottom rack?

When baking brownies in the oven you will want to use the middle rack of your oven. This is going to allow you to get an even cook on the top and bottom of the brownies. If it is not in the center it can create the bottom to burn if too low in the oven, or vise versa if on the top rack. 

Can I freeze lemon brownies? 

Yes you can freeze any brownies you don’t plan to eat right away. Just slice and place in an airtight container and freeze for 3-4 months. Then thaw on the counter when you want to eat them for an hour. Or refrigerate and let them thaw overnight in the fridge.

Ingredients

For the Brownies:

  • 1 ½ cup all-purpose flour spoon and level
  • 1 cup butter 8oz, at room temperature
  • 1 ½ cup granulated sugar
  • 3 tbsp lemon juice about 1 lemon
  • 2 tsp lemon zest zest of one lemon
  • ½ tsp baking powder
  • 2 eggs at room temperature

Instructions

  • Preheat the oven to 350F. Prepare an 8’’x 13’’ baking tray with parchment paper. Set it aside.

  • Place butter in a medium-sized bowl.

  • Beat it until creamy.

  • Then add sugar and beat for a couple of minutes.

  • Keep beating until soft and fluffy

  • Next, add one egg at a time, beating each egg until well combined.

  • Add lemon zest and lemon juice, and stir to combine.

  • In a different bowl, mix flour with baking powder. Then, incorporate it into the brownies batter.

  • Mix with a silicone spatula to combine.

  • Pour your brownie batter into the prepared baking tray, and use the back of the spatula to extend it evenly.

  • Bake for 22-25 minutes, or until the edges are brownish and the center is set. For fudgy brownies, your baking time will be closer to 22 minutes. For spongy brownies, 25 to 28 minutes will be ideal.

  • Once out of the oven, let it cool to room temperature before unmolding and slicing.

  • Before serving, mix all the ingredients for the lemon glaze in a small bowl.

  • When brownies are cool, coat your brownies with the glaze and let it stand for a few minutes until the glaze harden.

  • Slice and enjoy!
