Vegan Lentil Soup

Vegan Lentil Soup

Ingredients:

  • 1 cup dried green lentils, rinsed and picked over
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 carrot, diced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, celery, and carrot and sauté until the vegetables are tender, about 5 minutes.
  2. Add the lentils, vegetable broth, tomatoes, thyme, salt, and pepper to the saucepan and bring to a boil.
  3. Reduce the heat to low and simmer, covered, until the lentils are tender, about 30 minutes.
  4. Serve the soup hot, garnished with fresh herbs if desired.
