Vegan Lentil Soup
Here’s a great Lentil soup recipe that’s fast and easy to make!
Ingredients:
- 1 cup dried green lentils, rinsed and picked over
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 1 carrot, diced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, celery, and carrot and sauté until the vegetables are tender, about 5 minutes.
- Add the lentils, vegetable broth, tomatoes, thyme, salt, and pepper to the saucepan and bring to a boil.
- Reduce the heat to low and simmer, covered, until the lentils are tender, about 30 minutes.
- Serve the soup hot, garnished with fresh herbs if desired.
